I just got back from the Wizarding World of Harry Potter at Universal. It was a great way to spend a few hours.
If you like nature, there's a great kayak/canoe trip in a state park. Are you flying/driving? If you are driving, Marjorie Kinnan Rawling's house at Cross Creek is a new state park and is an interesting peek into old Florida.

I don't know anything about Orlando other than Disney World - sorry I can't help with any of the other orlando attraactions.
I love Epcot with adults, especially during the Food & Wine festival, which is in Oct. and Nov. At any time of year, if you enjoy wine and beer, there are tastings in most of the "countries" and you can have an enjoyable afternoon and evening strolling around the lake, eating and drinking. Then watch IllumiNations.
Do you know yet where you're staying? Boardwalk Inn and Animal Kingdom Lodge would be nice choices for adults. Keep in mind, there will be children everywhere.
I love the Segway Tour if you've never done it. Lots of fun!
I think just having the time to explore what interests you will make the trip very fun.
Early dinner at California Grill (before the the magic Kingdom fireworks) would be nice too. Jiko is another favorite.

There are some really good restaurants you didn't visit with kids.
When are you going (time of year) and where do you plan to stay (general area).
Winter Park is a nice place to spend the day and you may be interested in the Morse museum if you are interested in Tiffany glass. Lake Dora is nice too.

Shop and dine on Park Avenue (Bosphorus is a favorite of mine, but there are many good restaurants on Park Avenue)

Stroll through Rollins College's beautiful campus and see the Cornell Art Museum. Or visit the Albin Polasek Museum and tour the house and sculpture garden. http://polasek.org/
