In Springdale, UT there is a place called Noodles and Pizza or something similar. It usually gets good reviews here. We ate there last summer and were suprised it is one of those places that you order at the counter and then pick up your food and drinks. Very average pasta and pizza. Fine for a casual dinner but nothing special.
There is no Bryce, UT. Ruby's is about it which we had lunch at. It is a fine burger/diner type place similar to Country Kitchen or Big Boy or Cracker Barrel (hope I hit something you know).
From your list, you may not be going to the North Rim of GC but if you are, be sure to stop and get the fresh cookies at Jacob Lake (only one place to stop, you'll find it).

Hoodoo Restaurant in Tropic, UT (about 10 miles from Ruby's)
Don't remember name, but in Page in center of town there is a rib/steak place on right side (with the dam at your back) of the street in a small strip mall - basic but decent grilled, BBQ type food.

In Springdale, try the Bit & Spur and Oscar's for burritos and breakfast. In Torrey, definitely try Cafe Diablo. If you have a chance, stop in the tiny town of Boulder (near Grand Staircase Escalante)and have dinner at Hell's Backbone Grill. It is a truly amazing dining experience. And their breakfast is great too.
