Southern CA itinerary-open to suggestions

I will be meeting my 20yr old daughter in Anaheim as she finishes up a 6 month cruise contract. We will have 8 nights in total to explore. the first 3 nights we will be in Anaheim and our plans are made there. We then have 5 nights to "roam" some of our goals are Huntington Garden,Getty Museum,Santa Barbara, a touristy beach area like Venice Beach ,a state park (large or small) . We are not shoppers. We love history and nature and places off the beaten track. We fly out of LAX at journeys end. I am hoping to minimze criss/cross and backtracking (you have gotten gas lately??!!) Thank you.

If you head to the coast from Anaheim, a fun place to visit is Crystal Cove State Park.

While you are there, head a little south and visit Laguna Beach. A great place to have breakfast, lunch or dinner in Laguna is lasbrisaslagunabeach.com‎
A nice place to stay in Santa Barbara is harborviewinnsb.com and across the street on the pier are some fun restaurants to eat at.
A little north of Santa Barbara is the wine country around Santa Ynez and the quaint (but touristy) Danish town of Solvang. All of your other plans sound fun as well.

Since you are starting in Anaheim, I would include Laguna Beach instead of Santa Barbara. Less driving and since you love history you could at San Juan Capistrano to the mix.
Griffith Park and the Observatory would be nice since some of your stay is in that general area anyway.

What time of day/day of week do you fly from LAX? It actually might make quite a difference as to where you'll want to stay the night before. And what time of year is this trip?

Another option would be to go from Anaheim to Pasadena and stay there to explore the Huntington and that whole area for a few days and then go over to stay in Santa Monica/Vencice area for the last days to enjoy the beach. Unless you really want to see Santa Barbara for the mission or the town itself, I think it is kind of far to drive for just another beach experience when you could just stay in Venice or Santa Monica close to LAX. You could use the beach area to explore both the Getty Center and the Getty Villa-both of which or well worth it.

The only way Santa Barbara works is if you can fly home from there or fly to LAX (or elsewhere) for a connection. Otherwise, it's a 200-mile round-trip, although you could take different routes to eliminate repeat scenery.
