Rue 57 is open until midnight and has a good brunch and drinks: corner of 57th and 6th Ave, just up the street from the Hilton.
It's not quite as close, but the take-away breakfast goodies (not to mention lunch) at Mangia on 57th Street are worth the detour: between 5th and 6th Aves.
If you're looking for diner food, there's not much in the area. The one real NYC diner is Astro Restaurant, corner of 6th Ave and 55th Street. It costs more than my local diner, but the food is the real deal. (Don't let people tell you that the Brooklyn Diner theme shop on 57th Street is a real diner!)

As another post recently reminded me, I like the cocktails at Nobu57; the street level lounge is also only open until midnight.
The bar at Town restaurant in the Chambers hotel is beautiful and chic; open until 2am. (56th between 5th and 6th Aves)
The bar at the Warwick is mellow, but nicely old-school if you want a quiet nightcap (corner of 54th and 6th).
Also, Klein's is a bit pricey - but tasty - small supermarket right there on 6th Ave between 55 and 56th Streets if you're looking to pick up stuff. For snacks and cold drinks, go to the Duane Reade next door (grocery goods are on the lower level).

You are close to the delis -- Stage and Carnegie, great for huge breakfasts. Ellen's Stardust Diner is a fun breakfast too with singing staff. Maison is an excellent full breakfast place. Cosi is a super casual limited breakfast place.
Red Eye Grill is a fun spot late night -- often with jazz. You can also do sushi or light food when the full kitchen closes.

My favorite sandwich comes from the little shop next door on 53rd. I imagine they have breakfast things too. If you are Hilton Honors, you may get access to the Club floor and there's a complimentary breakfast offered there for HHonors members. Join Hilton Honors before you go if you are NOT a member and they may give you access anyway. Afternoon hor doerves there too.

I second the recommendation for the Stage Deli for breakfast or lunch. It's not cheap but you won't need to eat for the rest of the day. If Norman is still waiting tables there, slip him an extra buck for me--that guy has been there forever and is quite the character.

Here's another recommendation for Rue 57. Terrific breakfasts, brunch on Saturday and Sunday. However, the noise level is deafening at dinnertime and after.
We also like the convenience store opposite the parking garage entrance to the Hilton. Breakfast (cheap) prepared to order, hot/cold buffet (the best meatballs I've ever tasted...), and a nice, very clean, seating area.
If the weather is pleasant, Maison is a terrific place to enjoy late night drinks on the huge sidewalk terrace. Service has always been slow whenever we've been there, but it's a wonderful place to sit and watch the passing parade.

Another vote for Rue 57 and Maison for lunch or late night. For breakfast I like Europa. It is on the corner of 57th and 7th, but they are all over the city. You can also find several different types of restaurants on 55th and 56th streets between 6th Ave. and 5th Ave.
