Passover Brunch Recipes/Ideas?

Hello PamSF, I was so interested in your receipe for steamed asapargus with fried eggs and parmasean cheese on top etc. because several years ago I had friends from Castlefranco Italy stay with us.
This is a dish that they prepared for us. But they are not Jewish but Catholic. They said this receipe was "typical of how they prepared the asparagus in their town". Radicchio was also originally only from Castlefranco.
I would imagine (but do not know) that Jews many decades or centuries ago introduced this wonderful receipe to Castlefranco?
Because I am allergic to dairy products they prepared mine minus the cheese. My husband absolutely loved this dish, as I did although I did not have the cheese on it. So you can see why I was interested in your post.
