One night in Las Vegas, where should I stay?
This is just a stop-over for my husband and me on the way home from Red Mountain Spa in Utah. I'd like a nice dinner, nice room, and easy access to the airport for my 7AM flight. I'd rather not spend a fortune. Thanks!

Pretty much any hotel on the strip is an easy ride to the airport, which is only a few miles away.
I'd suggest searching Travelocity/Expedia/Orbitz for a Las Vegas hotel in your price range and of the quality you're looking for and see what they come up with.
Most of the newer hotels/casinos have good restaurants within them.

IMO, Bellagio has the best restaurants with Circo being at the top of the list. But rooms are real pricey. Try the Monte Carlo. I've stayed there and thought it was nice. Friends of mine just stayed at Paris and thought it was nice and reasonable as well.

was at Excalibur last Tues-Thurs. nite. Much cheaper in middle of week vs. W/E. Was about 64/nite. Had a great buffet (25pp)at Belligio--Buffet at Excalibur was only 12pp and was terrible. all hotels are together and easy to get to airport

The MGM is probably as close to the auto entrance to the airport as any of the megahotels, it has plenty of nice rooms (about 5,000 of them) at quite decent rates, lots of excellent restaurants and is a quick cab or shuttle ride from the terminal.

For one night, I would recommend Mandalay Bay. Many nice restaurants, beautiful pools -- a great place to stay. Could be a bit pricey, depending on the day of the week and what's going on in Vegas at the time.
I would stay away from The Excalibur. I doubt that's what you're looking for.

Just be warned that some hotels will not book a single night on a weekend online. You can usually get around this by calling the desk. Some don't allow Saturday checkin.
I think Mandalay would be the best because of proximity to the airport, not that you'll have a lot of traffic at the break of dawn to contend with.
