Since you mentioned "quiet", one of my favorites during a stay of a month in the building above it was Thalia which is at the corner of 50th and 8th, very convenient to most of the theatres. No music or entertainment, and sometimes it's quieter than others. But it's a nice space and you can grab comfortable lounge chairs unsually. Drinks are good and relatively inexpensive, and they have great small cheese plates, desserts, or snacks if you want something extra. Friendly bartenders.

For Bar Centrale, I hear you must have a reservation, even for just drinks. The bar at Sardi's can be a lot of fun after a show, especially if you're interested in chatting with others about the theater.

Three of my favorite bars in New York are the Flatiron Lounge, Employees Only and the Brandy Library.
Flatiron Lounge is at 37 West 19th.
Employees Only is 510 Hudson Street at Christopher.
Brandy Library is in Tribeca at 25 North Moore St.
