I wasn't too clear above about cheese courses. In France or Italy you can often (at least half the time) ask them to substitute cheese for a dessert even within a fixed price meal when cheese is not shown as an option. It's no big deal to them and I do it often. And while cheese courses are slowly becoming more popular here in the US, I have rarely seen one listed as an alternative for the dessert on a fixed price menu. I have asked numerous times and they look at me like I'm crazy. The usual reply is that if they have cheese at all, I just need to order that extra.
I was delighted at the Terraces at the Metropolitan Opera, however, when we dined pre theatre, and returned to our table at intermission for dessert -- and I could choose a wonderful selection of four cheeses instead of dessert.

Brahmama-I'd just like to say again, good luck with your trip and adjusting to DH's new situation. I feel confident that once you educate yourselves you will be able to manage quite well in all aspects of your lives. And to WALKINAROUND, major dittos. My DH was diagnosed in his early 40's (type 1) and I'm just so grateful he made it that far through life without the added burden. I hope someday they find a cure....

Brahmama,
My DH is a diabetic, so let me first just say that yes, becoming educated about the disease will make you much more comfortable with your husband's situation.
Regarding "taste of NY" type tours, I researched this question a few months ago when planning a trip to NYC. As it turned out, we didn't have time for a tour, but Foods of New York says on their website that they can "often accomodate your needs" if you let them know when you make your reservation that you have someone in your party with dietary restricttions.
I hope you have a great trip!
