The offical website of the MTA Metropolitan Transit Authority covers the NYC subway and bus system

The suburban lines Metro North and the Long Island railroad are also listed there, but separately

Each system has route fnders that show what trains go where when and how much it costs.
For the subways, do pay attention when it says there's construction or other problem at a certain time (usually nights and weekends) but don't take any other actual schedules for the subways seriously!

For info on trains from Grand Central go to the website of MetroNorth. For subways - there is a single map for the whole city. You should be able to find both at the address listed above.
Also you can go to hosptop.com - which will give you travel options between any 2 places in NYC (and mostly suburbs) by any type of transit you choose (subway, bus, train, cab, etc.)
