This is highly individual, depending on your personal insurance coverage. If you have comprehensive coverage on a vehicle (we have comprehensive on one car, liability only on the older car), you could be covered (so that when you rent, your coverage is that of your better car).
You should KNOW your coverage and policies before you travel, and not spend extra money on unneeded coverage or sketchy riders offered by 3rd parties.

Stolen is stolen. I don't think the insurance company can blame the victim and refuse to cover it.

If the car itself was stolen, would we say its their fault for leaving it out in the open?

Auto insurance covers the car - not whatever you may be carrying around in it. Contents would typically be covered under a homeowners policy - if they are significant enough to warrant filing a claim.

Homeowners insurance should not decline because items were out in the open - but typically there will be a deductible and electronics might not be covered.

As has been addressed upthread, rental agencies do offer Personal Affects Insurance which covers anything stolen from the car. They don't deny coverage if the items weren't sufficiently hidden.

I am happy to say that my daughter's Home Owners policy covered all of the stolen items..........subject to a $500 deductible, so things worked out better than expected.

Just an added point. They claim most similar thefts occur when rental car drivers pull into their parking spot and proceed to store things in their trunk. Any thief watching will see that it is the perfect car worth the effort to break into. In Florida it most often happens at the beach, where people stand by their open trunk perhaps full of luggage, and proceed to place watches, cell phones, jewelry, cameras and other goodies into the trunk, inviting a robbery as soon as the leave the car.
