amychar123, I don't know where you are located, how much you want to spend or what kind of guests you are inviting. But if I were living say on the West Coast and wanted to throw a luau, this is what I would do.
Order frozen laulau, pipikaula and poi from Young's Fishmarket in Kapalama and have it shipped to me. Make my own chicken long rice, lomi salmon and ahi poke, using ingredients that should be available on the mainland depending where you are. You could cook up some oven kalua pig as well, with fresh fruit and haupia for dessert. That is a menu that would bring tears to a homesick locals eyes.
