JFK international connection
I am going to book a flight from Europe to Mexico, with a connection at JFK. Now, since I do not hold a valid US visa I cannot pass through passport control and customs. But my connection requires me to switch terminals. Can I do that without a visa? Sorry if its a trivial question, I just want to be sure...

If you hold an EU passport you don't need a visa. Look at the info here

Let me add that there's no such thing as "international transit" at any US airport. If you can't enter the US legally, you can't transit at any US airport, JFK or otherwise. Even in the same terminal.
It's same thing with Canada. But depending on your nationality, you may be able to enter Canada without a visa, or you can get a Canadian visa more easily.
You can fly non-stop from Europe to Mexico City, at least from Madrid.

Hello adama, One of my friends in Italy who is a citizen of Mexico but until this year had not acquired her Italian citizenship always flew home from Italy to Mexico City via Frankfurt. Venice-Frankfut-Mexico City.
Do you have an European country passport or a Mexican passport? I have the feeling you have a Mexican passport. If so, arrange a flight that will fly you from a European airport to whichever airport in Mexico you wish to arrive at even if you have to change planes a few time.
You say "I am going to book a flight"...so I assume you have NOT booked a your flight yet. You do not need to book a flight with a connection in the US (JFK or elsewhere in the US). Most Europeans I know make their reservatins through a travel agent. I stronly suggest that you talk to a travel agent as they should have all the information that you need to know to find the proper flight for you. Best wishes.
