As far as priceline's enforcement of their rules, they probably wouldn't know if you snuck in an extra person. However, this would also require that you have Aunt Bee just sort of wait around in the lobby area of the hotel, looking totally detached from your already-two-person party, as you check in. I'm sure you can get away with it, but it's up to you. I mean, when you are talking about 2 star deals on a 4 star hotel, why pay the extra per-person charge? Seems to me that defeats the whole purpose.
As for the OTHER thing: we went last year and had cooler weather than everyone said we would. Unless it is truly warm weather, I am not sure that it's worth it. Be sure to ask everyone what the weather will be like before you go.
Do you plan to rent a car there? I definitely think a convertible would be worth it.

Re: Priceline they don't always enforce the two in a room thing but they are allowed to - this has meant my sharing a bed on more than one occasion with people they pulled in off the street - and some of them snored!!!!
