larrybirdfan,
We were in Moab in mid-May and stayed at the River Canyon Lodge-Inn and Suites. We had a junior suite. Two queen beds separated by a kitchen counter and overhead cabinets. Had a microwave, small refig w/freezer, and a sink. Very clean, quiet, and comfortable. Plus the staff was really friendly and helpful. Just $75.00 per night. In easy walking distance of restaurants and shops in Moab. I learned about this place from sharondi, here on Fodors. We'd definitely stay there again.
There are some fancier places outside Moab on Hwy 128, but that adds to your driving time to get to the Parks. And dining options are limited unless you drive into Moab. A lot depends on what you're looking for. Do a search here for Moab lodging and you'll find some other threads with info.

We were in Moab last summer and stayed at the La Quinta right on the main drag in Moab (it's a real small town). It's typical chain accommodations, but very clean, coffee and breakfast included (continental), laundry facilities, etc. I think we paid about $50-60. It was a real short drive to Arches - also easy to get to restaurants, shops, etc.
Decent place for dinner is Moab Brewery - nice folks and good food. If you are into Americana kitsch and have some $ to spend, try the Canyonlands by Night dinner and 'cruise'. It is a 'family' evening event - stuck in time in a twilight-zone kind of way. If I recall it costs about $30 per person and includes 'dinner - chuck wagon style, and then a 'cruse' down the river with a 'light show' on the canyons.
Enjoy Arches - we loved our two days there and plan to return.

Our favorite is Red Cliffs Lodge outside Moab on HWY 128. It provides the perfect combo of rustic luxury, privacy, comfort and views. The rooms are bi-level and have a living room/kitchen and a private terrace looking out on the Colorado River and red rock walls only yards away. The restaurant has a nice view and decent food, but the breakfast a bit pricey for what it was. We brought in take-out food or bought a few groceries for most meals which we enjoyed on our terrace. Staff was very friendly and helpful, but not intrusive.
And we loved our morning drive along the scenic route into town.

my family and I also stayed at the La Quinta and it was fine - the outdoor pool was hot in June, so it should come to a nice boil in August. Arches is nice. If you are going west after that, Capitol Reef NP is a nice place to spend a few hours - it looks very different than Arches.

larrybirdfan,
The River Canyon Lodge is a great deal and it's one block off the main drag which is nice and quiet but close to everything. We'd also stay there again. You might want to check out the Dreamkeeper B&B too. I haven't stayed there yet but I probably will next time.

My family and I stayed at the Aarchway Inn two summers ago. It is on the edge of town closest to the parks so a bit far for strolling into town but convenient for park visits. We found it to be clean and quiet with good A/C and large motel-type rooms. My kids really enjoyed the swimming pool and the desk personnel were friendly.
It sounds like you have quite a few good choices. Have a great trip!

We stayed at The Gonzo Inn in August 2004. Nice pool area, pleasant breakfast room. Would stay there again.
