How much do you want to pay?
What do you mean by "vegetarian"?
No meat or dairy products but fish okay?
Hippie vegetarian (grains, tempeh) or French vegetarian or asian vegetarian?
Would you eat a vegetable dish prepared in a restaurant that also cooks meat and fish and uses dairy products?
There are lots of places to eat in the area, beginning with LeMaitre right in the hotel, a five star restaurant, and I am trying to narrow the possibilities.
Also, if you are arriving after normal business hours, the airport in Richmond is often very short of cabs, so you may want to prebook one to meet you.

We took a cab to the airport from the Museum District and it ran us (three of us) a bit over $40, I think. Groome transportation does taxis from the airport and they do fares by zones: http://www.groometransportation.com/richmond_fares.htm
On that map, I think the Jefferson would be in the white or pink zones in the center.
As far as restaurants, a vegeterian friend of mine likes Ipanema (http://www.ipanemaveg.com/) but it's in the middle of VCU, and feels like the basement in which it's located.
