Florida in December
Please give me info on where in Florida would have pleasant enough weather for a family of 4 trying to escape a Canadian winter for 7-10 days. Beach preferable, but I do not expect beach weather. We have been many times to WDW and spent a weekend in MIA in May.

I'd look into Naples, FL. We go every year, and never run out of things to do in the surrounding area, including visits to Ft Myers, Sanibel Island and Marco Island. The weather is always in the mid 70's (although I'm sure there are occasional cold spells).
There are several resorts you could consider: Ritz Carlton Naples, La Playa, Hyatt Bonita Springs to name a few.

Little Palm does not accept children under 16, if that's an issue?
I wouldn't stay north of Sanibel/Ft. Myers on the West or north of Ft. Lauderdale on the East if you're looking for warmth. That's still never a guarantee, but likely to be at least several degrees higher than anything further north.
And DOCK, trust me our beaches in Naples are FILLED with Canadians in December -- even swimming in the Gulf. We think they're crazy, but they're happy!

According to Wunderground the weather averages in December for Ft. Lauderdale and Palm Beach are about the same except it can be a little cooler at night in Palm Beach.
Dock,
You can check all of your weather averages here to get an idea of what the temps. might be in the areas of your interest.

Hi DOCK.
We escape the Canadian winter for 3 months every year in Naples.
The beaches are great, good restaurants, shops etc. Actually we find it just perfect. Haven't stayed in any of the hotel resorts as we rent a condo at a tennis club.
Have heard good things about the Ritz from friends who have stayed there.
The weather should be pretty good as you are far enough south.
Have a great holiday.

Thanks everyone. Booked Ritz Naples. But if anyone has any other suggestions for FLL I will take a look at those hotels as well. Andrew I am not sure if Pillars would be family friendly.
We will likely fly into RSW and out of FLL.

Hyatt Coconut Pointe in Bonita Springs (15 min from Naples) has beautiful pools and you are also entitled to use the amenities of the next door property Coconut Plantation. The only down side is tha you have to take a small 15 minute ferry ride to the beach. But the pools and lazy river are worth it. I would stay a couple of nights here and the others in the Ritz.
