although not on the strip, you might want to check out the South Point Hotel Casino.. they also have bowling and a movie theater, free shuttle service from the airport, and a shuttle to the Mandalay Bay each day all day.

The "Shark Tank" pool at the Golden Nugget is awesome! The hotel is 4-star and very reasonable priced, especially in summer ($59 weekday and $129 weekend). We rented a car, so it was no problem getting to the Strip.

The Signature is so nice because it's a real hotel rather than a casino hotel, and still in the middle of the action.
Just returned from the Palazzo, which was nice, but the Signature's still my favorite. You can get great rates renting directly from owners on vrbo.com

Keep tabs on www.vegas-promotions.com for deals at Mandalay Bay. They have an excellent pool that kids will love. It is fairly close to Excalibur and NY-NY, two hotels that offer a fair bit of kids programming (roller coaster, medieval shows, etc.). Mandalay Bay really does have the pool of pools for families on The Strip.

If you don't want to be at the way south end of The Strip, however, look into MGM Grand. Try to stay away from the family-oriented hotels, and just use them for entertainment, as they are usually pretty dingey and none of them are known for great pools.

Hi, Wyndham Grand Desert is a timeshare but you might be able to rent rooms nightly. They have adult only pool and family friendly pool. They have a game room, activities, meeting rooms, grocery, deli etc. The best part is they are condo type rooms with full kitchen facilities and washer/dryer. If you agree to attending a presentation with the sales office they may be able to give you a great deal with some freebies thrown in (shows, dinner, etc.). Hope this helps.
