Well, if you haven't already taken the kids to see Mammouth Cave I'd recommend that for your first stop. You could then overnight in Nashville and take in a show, or drive further on to Chattanooga.
Tennessee has several Civil War battlefields including Stones River, just north of Murfreesboro, and Lookout Mountain at Chattanooga. Just north of Atlanta you'll find the Kennesaw Mountain Battlefield, another must see for Civil War buffs. By taking I-85 to I-185 south of Atlanta, you reach Columbus GA where you will find the Confederate Naval Museum which features some CW ironclads. From there, work your way back to I-75 by way of Andersonville, location of the infamous CW prison camp and a newly constructed POW Museum.
If the Civil War isn't your thing, you can take the kids to Six Flags over Georgia which is just west of Atlanta, or visit the Martin Luther King sites in downtown Atlanta. You might also consider taking a detour off I-75 to visit Plains GA, hometown of former president Jimmy Carter. If you plan to overnight in the area, stay in Americus for you won't find many tourist accommodations in Plains.
Just north of Lake City FL, I-75 intersects I-10, making this area a tourist oasis of fast food restaurants and overnight accommodations. Enjoy your roadtrip!
