You might try Dornan's in the Southern part of the Teton, just off the main road. It has an excellent barbecue, which I believe is offered at dinnertime. The outdoor setting is beautiful. It would be about a 15-30-minute drive from Colter Bay.

The Mural Room in the Jackson Lake Lodge has a spectacular view of the Tetons and pretty darn good food. Or, if you want to splurge a little for truly great food, dine at the Jenny Lake Lodge - a prix fixe menu (around $50 pp, drinks not included) for a wonderful meal. You need a jacket, though.

We found the Mural Room nice, but enjoyed sitting outside on the deck overlooking Jackson Lake and the Tetons much more enjoyable and more casual. You didn't mention if there were any children - but my kids found sitting outside on the deck fun.

If you want a quick, casual dinner - Leek's Pizza at the marina is great. Deck overlooking the The Tetons.... It's about 5 minutes from Colter Bay. There's also a couple of restaurants right at Colter Bay. One casual cafeteria style, one sit down.

We ate dinner in the Mural Room at the Jackson Lake Lodge which was very good but pricey w/ children. We also enjoyed the cookout by their pool one night. However, the highlight was the food and entertainment at the Bar J Ranch in Jackson. I highly recommend it!

Forgot about the Bar J - another vote for this show! Don't miss it - a highlight of our vacation. The musicians are very talented, the food is good and you will laugh until you cry! You do need reservations and arrive early - you are seated by your arrival time.
