I have 3 generations of family from the Big Island, and have lived there for many years. What I found with all Big Island luaus is that they either have good entertainment, and lousy food, or lousy entertainment and good food, or lousy food and entertainment. I've never been totally impressed with a Big Island luau. BUT...
The Polynesian Cultural Center on Oahu is absolutely incredible.

IF you do it right (Admission & Show - Adults $69.95. Splurge on a fancier package for better seating etc if you like, but I'm a cheap date.), you will sacrifice an afternoon & evening for this amazing experience. If you like history, and enjoy experiencing other cultures, there is no better place than this!! Get there early (noon - 3pm), enjoy all the shows by natives from around the Pacific Rim.
The college trades tuition for the students participation in showing off their culture at all the exhibits at the center. The fire dances, hula dances, crafts and all the other aspects of all these different cultures are not to be missed!!! And when you finally sit down for the evening show, and experience the food, I do believe that you will be impressed. I give the food a 9 on the 1-10 scale (10s only go to only the best I've ever had in living there for many years). The Kalua Pork is some of the best anywhere, other native foods are awesome. And to top it all off, there is a fairly impressive fireworks display. Have your batteries charged, and your memory cards/video disks empty and ready to go.
The only bad side to the PCC is that it is on the opposite side of Oahu from Waikiki, and the show ends after dark, so it's unfortunate to have to drive for an hour to get back to your hotel.
Oh, and when you come back over the mountain (if they haven't changed this) and the speed limit says 35MPH (on a 3 lane nearly deserted highway), make sure you slow down. The Hawaii Police Department had 6 cops sitting just over a hill when I came back through there, fortunately I was going slow, so they didn't get to pull over the only car they had seen in 10 minutes.
Aloha, and enjoy your trip!!!
