Well, we'll be dying to hear about your trip and your thoughts when you get back. I actually talked myself into a trip from this thread! Will be out there the last week--although taking my time going and coming, so only a few days to soak up some favorites.

I agree with a previous poster - Sun City is not "minutes" from dowtown Austin unless you are traveling at about 3 AM and going on all the toll roads - and then it's still about 25 minutes. But really, 35 is the best way to go.
Georgetown is cute and AUstin isn't far. To the North, Salado is nice too.
And yes, you MUST visit mid July or August. Austin (and San Antone) are both hot and humid from about May to September.

The best sports bar that I can think of on the NW side of town is Champps over on I-10 near Huebner Road. Depending on traffic, probably a good 25 minute drive. There is a Chillis Restaurant on 1604 near Culebra, about 10 minutes away, that carries games on the t.v.s in their bar. On 151 near 410, about 10 minutes away, there's a TGIFridays that probably has a similar set up.
Did you check with the Radisson to see if they have a sports bar? I wonder if the neighboring Hyatt has one...it seems they do,
