Has anyone had experience traveling Amtrak on one of their silver services down to Florida? Can you tell me anything about their sleepers, and if it's worth the rather hefty increase in fare?

IN one word: yes. If you're taking the overnight trip, then get the sleeper. Amtrak includes the cost of meals in the price of the sleeper ticket.

Yes. There is a huge difference between traveling coach and traveling in a sleeper. You might be able to wait until you are on the train and buy the sleeper from the conducter (it can be lots cheaper that way) but you take a chance that they are all full. Also, the sooner you get your tickets they cheaper they are. Price goes up as rooms fill.
