5 Adults need hotel near NYC
Looking for recommendations on a hotel that will accommodate 5 adults (we need 3 beds) near NYC from 3/30 or 31 to -4/2 or 3 (dates unsure right now). We stayed at the Doubletree in Jersey City 5 years ago and that was great, but I am wondering if there are any similarly priced hotels closer to Manhattan.

You will need to google the suite hotels - since you can;t put 5 adults in one room in NYC.
Any hotel in Manhattan is likely to be considerably more.
You might have a look at the hotels in Long Island City - 2 subway stops from Manhattan - but a mixed use area (warehouses and autobody shops plus budget motels). Make sure you look at the distance from the closest subway
If you give your specific budget in $ people can make more specific suggestions.

Have checked some of the budget/moderate suite hotels in NYC and either they are fully booked - or they are above your budget. You might check the Affinia group to see if they have any suites in your price range - doubt it very much - but worth a look. Perhaps look for prepaid discounts or similar.

A suite with 3 beds is going to be at least double your budget in Manhattan, so I don't really think that's a realistic option.
What is realistic is to rent 2 rooms at a hotel in Long Island City for about $150 each (or less). I'm pretty sure you can find 2 rooms for $300 including tax and probably get a free continental breakfast and Wi-Fi.

Try The Milburn Hotel on the upper west side - a family suite may work for 5 but probably includes a pullout sofa. You may want to call them and see if any of the 2 bedroom suites are available. This is an older hotel but quite clean, breakfast included.
It is so convenient to actually stay in the city. Good luck.
