Bolsa Chica State Beach is not in Los Angeles, or even LA County, it is south of Sunset Beach and north of Huntington Beach in Orange County. Used to surf there long time ago.
There are a number of good, not expensive motels close to Disneyland, Best Western Park Place Inn is probably one of the closest, it is next to the crosswalk across the street from the entrance to Disneyland.
A bit further away (but on the ART shuttle route)is Residence Inn Maingate with full kitchen, free parking and hot breakfast each morning and light meals on some week nights.

Day 1: Drive Portland, OR to Redwoods National Park. (6.5 hours). Overnight in Redwoods National Park at Bluff Beach Campground

* Do you mean Gold Bluffs Beach campground in Prairie Creek Redwoods SP? That's a very cool location, right off the beach. I love it there. The only 2 potential downsides to this campground is that it is down a longish dirt road, and the campground is exposed without much in the way of trees and bushes, so it can be windy. I took my Mazda 3 to that campground, and it was fine, but we weren't loaded down with much gear and we took it very easy in some spots along the road. If you have a higher clearance vehicle, then no problem.

Day 5: Drive Redwoods National Park to Mendocino, CA (3.75 hours), overnight in Mendocino (suggestions?)

...which is exactly what I was going to suggest also

Day 17: Drive Monterey to Pfeiffer Beach (1 hour) overnight at Pfeiffer Beach
Day 18: Pfeiffer Beach

* Yes, as mentioned, no camping at Pfeiffer Beach. If you want to be near the ocean or a beach, these are some options:

Andrew Molera SP - few walk-in sites that aren't far from the ocean.

Julia Pfeiffer Burns SP - a couple sites on a bluff overlooking the ocean.

Limekiln SP - Mentioned in a previous post

Kirk Creek - Mentioned in a previous post

Plaskett Creek - Across the highway from the ocean, but very close to Jade Cove, which has access to the beach down a path from the bluffs.
