Since we are probably going at the end of Dec., high season, I would expect that we would have to pay $125-200 per night, especially for an all-inclusive (2meals), but any suggestions are welcome. We are looking at a sale fare on AirTran.

You are right about high season - have you looked into anything at all yet? Many sought-after places are already sold-out.
You might want to check out locogringo.com - look at Akumal Beach Resort. It's probably the best AI for the price per night.
