I've read good reviews about Peru for Less - search TripAdvisor forums. Waiting to hear back from them on a custom tour before deciding on whether to use them. As with most of the other companies I have contacted, they've been a little slow in responding - but I can't complain since I am not going until April 2009.

Did you search for PeruForLess (try with and without the space) - it is under the umbrella of the LatinAmerica4Less group. I'm not sure I am going to use Peru For Less as the itinerary I received for a custom tour is not to my liking. As well, after they received my initial request, there was no confirmation of the receipt and I had to follow-up myself to find out if they were interested in working with me.
Chaska Tours (local company in Peru - http://www.chaskatours.com/), on the other hand, not only immediately confirmed the automated contact form I sent them from their website, but I received an email from the agent assigned to my request later that day to inform me that she is working on the itinerary. I was impressed that they noted we were interested in photography and had assigned someone who had photographic training to work with us to develop an itinerary. As well, she noted that I was interested in off-the-beaten-path places and said she had some great suggestions for such places. I'm now waiting for the preliminary itinerary.
I found the name for Chaska Tours on Frommers, and found positive reviews both there and on TripAdvisor.
I might still end up planning the whole thing myself ... but we'll see.

Since neither of us speak or understand Spanish we are hesitant to tour Peru on our own and the Wonders of Peru sounds nice, although I would prefer it to be longer. But all other tours I looked into were considerably more expensive.

We don't speak more than a phrase or two of Spanish, but from what I have read this should not be a problem. In any event, you might be able to customize the Wonders of Peru by adding a few days. Also, Chaska has some packages that you might want to compare.
Regardless of who you end up going with, have a terrific time.

10/19/2010 - I had booked and paid for a trip to Panama, leaving this Friday. I just got a call today (Tuesday) saying the company is bankrupt. Not only did they not book my trip, they said they are not refunding my money. STAY AWAY
