I have only been once to each, but it would take me hours to describe the differences.
Belize: majority speak English
CR: Maj Spanish, but English seems to be second language
Belize: Carribean only
CR: Pacific on West, Car on East Coast
Belize: Incredible diving, snorkeling
CR: OK Diving, not good vis.
Belize: Mayan Ruins
CR: Volcanos and Cloud forests
I personally love Costa Rica and will be back there in August. It was the most magical trip that I have ever taken. I liked Belize, but didn't come back from it like I did from CR. There was just something about it and the people, the nicest, most helpful that I have ever met. There are so many great things about both countries. This question has also previously been asked and I believe Lan Suder posted a great comparison, just do a search and you can't go wrong with either place.

I've been to Costa Rica twice and Belize half a dozen times. Costa Rica wins for the most breathtaking scenery. It's also more 'work' to see some of that scenery. The Arenal volcano is awesome, the Osa peninsula has amazing animal life.
Belize has those awesome caves and stunning Mayan ruins. Fairly easy access to Tikal in Gautamala.
Belize overall seems 'easier'. English is the official language. Everyone takes US dollars, even though you get Belize dollars for your change the 2:1 conversion rate is simple. The roads are better, the distances shorter.
My heart belongs in Belize. I feel about it the way the previous poster feels about Costa Rica. You will have a wonderful vacation which every one you decide on.

I can't compare (loved Belize, haven't been to CR), but from what I've seen and read you can have a fabulous vacation with a family both places. My best advice is to pack really light, allow 3+ nights per stop and day trip from bases, don't try to do much but transition and rest up on transition days, and don't have too many specific expectations heading in (seeing lava at night, seeing a manatee, etc.) Your kids are so lucky! Happy trails!
