You won;t need to change unless you just want to. Dollars are welcome everywhere. Just be sure to be clear on what the price is marked in as the peso uses the $ as well.
If you use ATMs they will dispense in pesos so be aware of that also.
Tips in dollars are fine and dandy.

If you get way off the beaten track in some small towns, you might find someone who doesn't want dollars, but it's rare.
The one reason we found to carry pesos was that in many cases, when prices are posted in pesos and you pay in dollars, you will receive a rate of only 10:1. We were able to exchange dollars into pesos at 11:1, so this saved some money over the course of a week.

You can get peso from an ATM (the airport would most likely be your first opportunity or exchange at a casa de cambio or bank.
When traveling in Mexico I prefer to use the currency of the country. I think it is most polite, as well as getting you the best value.
