Iberostar Paraiso Grand just opened. Adults only with butler service and gourmet dining. Indoor/outdoor heated pools, and total pampering. Here's a link to a review.

I would recommend any one of a number of properties in the Palace Resort chain (www.palaceresorts.com).

My wife and I travelled to Cancun for the 1st time back in 2003 and stayed at the Moon Palace. This was argueablyone of the nicest upscale properties we have ever been to. While it wasn't the Ritz, attention to detail, pampering and accomodation were a definate plus.

Drink and eat til you drop 24/7 not to mention enjoy many inclusive tours. Our experience was such that we opted to become members and will be going back in 4 weeks to stay at the Playacar Palace in Playa Del Carmen. This wil be our 3rd visit while staying at a different location each time.

If price isn't an issue and you love great food and drink - Royal Hideaway hands down. Minimal (but some) nightlife. Right now their beach is minimal too. But it's there and if it's serious pampering you're looking for - go there.

I've been 3 times and plan a 4th trip in June - lousy beach and all. It's THAT good.

Have also stayed at Riu Palace Mexico - it's beautiful, but food is no where near as good as RH.
