I'll add that Mazara del Vallo is worth a half day. Their casbah is pretty interesting.

West of Palermo on the coast is an interesting little town called Scopello. There is a derelict tuna factory and a nature perserve. While it is not worth a special trip it is worth it of you are in the area.

After leaving Agrigento if you head East there is an incredible coast you can see. I have a piece of marble that I still have to this day that I picked up there when I lived in sicily for 1.5 yrs.

There is a small greek theater there as well along the coast that they were excavated that was completely white limestone. it was incredible.

Several interesting places quite close together over on the western side of the island - Trapani, Marsala and Favignana have already mentioned, but there's also the the lagoon islet of Mozia and the nearby salt pans, which don't seem to have been?
