Europe is a continent with several countries and to narrow down the places to visit for a two-week vacation is a difficult task. But let me try to help you out with some research done by me. You clarified that your couple is not interested in history and arts and would like to see landscapes and geography.
My best advice to you to make most of your stay pleasant and peaceful is to hit some parts of Europe where there is the right mixture of the past and present.
My choice for you is to land in Krakow, the capital of Poland has many things to offer for the young couple, be it the horse ridden chariots, great escape rooms, and vodka bars to kill the night.
Hit Hungary to feel the charm of Budapest in Hungary will be another great place to spend a day or two with its old charm ruin bars.
Amsterdam in Nether Lands will never bore you with plenty of cheese and romantic stay with canal evening dinners and romantic cocktail boat trips
To feel the warmth of nature, Switzerland has everything to make your stay a great experience with snow-topped mountains and lush green strips of land. Being a small country, you can stay in any town of your choice and taste the chocolate by hopping around the lakes in those towns.
By this time, the two weeks of your vacation will be over and if you have a couple of days, don't miss to gaze the dreamy and picture-perfect landscapes of Austria.

As a representative of the Thos Cook Company, I have extensive experience at answering these kinds of questions. In my opinion you...(sound of phone ringing)...err, just a moment please.
(answers phone call then listens without speaking)

Um, never mind.
I am done. The end.

Ninfa has extremely limited visiting times. In autumn it's open only three days, two in October and one in November. It's also almost impossble to get to except by car or expensive bus tour.
Zebec, i wish you'd mention these limits when you recommend Ninfa, which you do frequently.

After taking this two week trip, what are the chances you'll catch the European travel bug and be able to plan another trip withing the next few years?
You can never go wrong with Paris, Rome and Amsterdam.
These are all world class cities. Depending upon your interests you can train from Paris to Tours which is chateaux country and visit a couple of chateaux.
Amsterdam is a city but very close to a couple of somewhat smaller cities that will give you a different perspective. Examples would be Utrecht or Leiden and The Hague or all three in two days.
I think if you spent 3 days in each of the larger cities above , two in Tours and two days doing day trips the Netherlands you'll get a good sampling of what you can see.
