I wanot shut down on Christmas day. Most shops were closed and many restaurants and cafes, but enough things were open that we had no problems.
In fact, we went to the Rijksmuseum on Christmas, there was outdoor skating in several parks, we stopped at a cafe for mulled wine and hot chocolate, and had a very nice dinner (reservations made in advance) that evening. Although we didn't do it on Christmas Day, I did notice that the canal boat tours were running. Not sure if the boat schedule was limited, however.
Traveling over the holidays requires a bit more planning, but well worth it. I'm sure you'll have a wonderful time no matter where you end up!

These are the revised plans. Longer stays in cities with some day trips
Amsterdam -5nights .
Berlin 4 nights.
Munich 5 nights
Salzburg 4 nights
Vienna 5 nights
Prague 5 nights
We'll be getting the train between the cities with the longest trip being 6.5hours between amsterdam and berlin.
Christmas day will be spent in Prague. Is that a good choice or is another one of these cities better?

Sounds like fun. My wife and I did a similar trip in 2012 landing in London and then visiting friends in Dijon with final destination Vienna to hook up with family and spend actual Christmas. Along the way we stopped in Strasbourg, Heidelberg, and Nuremberg. The family stopped in Prague before meeting up with us and had a great time there. Just be aware of what is open or not on Christmas Eve, Christmas Day, and the 26th. Make sure you have reservations for dinner those three days. You can always cancel if plans change. In Vienna we had dinner at Cafe Landtmann Christmas Eve and they were turning away walk-ins. Christmas Day we went to a Christmas market at Schonbrunn Palace and we ate a bit there and then found a small restaurant open. I don't remember what we did on the 26th, but I do know a lot of places were closed. Have fun!!!
