Where to stay 3 nights, between Venice and Munich?

Traveling from Munich to Venice, and back, last week of October.
I'd love to hear suggestions of where to stay, eat, visit.
I like to walk, eat, drink wine, photograph, and enjoy non intense hiking too.

Towns: Bolzano/Bozen (Oetzi Museum etc., cableway to the mountains), Trento, Lienz, Verona
Nature: Groedental/Val Gardena/Val Gherdeina, Seiseralm/Alpe di Siusi, Kalterersee/Lake Caldaro, Cortina d'Ampezzo, Lake Misurina, any place along Lake Garda ...
