To answer your subject question, ANYTIME YOU CAN!
But since you're talking specifically about the Amalfi Coast, I'd say mid to late May would be lovely. You're going to get some crowds, but not hoards. It won't be necessarily warm enough for the beaches to be all open like they are in the summer (which will help with the crowsds), and you might get a little bit of showers or light rain mid-May, but it'll be lovely. We were there at the end of May a few years ago and 1 day was gloomy but the other 4 were warm and glorious. I still recall bobbing in the salty sea air in Positano, letting the stresses of my life and career melt away.

I've traveled in Rome & Tuscany in late Sept/early Oct., and in northern Italy in early May. Italy is beautiful regardless of the weather. Although I don't recall an abundance of flowers in Rome in late September, the weather was wonderful for walking all over the city. This year, we were in Venice in late April and the wisteria was gorgeous!
