Michelle, if you are into art, the Van Gogh Museum is a must. The Rijksmuseum has so much more than paintings, we found the furniture fascinating. A canal boat tour is a must... and a stroll around the Jordaan is lovely. Your second trip will be even more fun! Have a grand time!

The eel sandwiches sold by street carts are not to be missed (look for 'paling').

All of the above are great ideas, but don't forget to include Anne Frank's House - much more than a museum. If you're adventurous with food, try an indonesian restaurant or go into one of their delis/cheese stores (can't you tell I'm from New York) to see & sample some cheeses that never make it to the US. I also love their candy stores - I've never seen so many different kinds of licorice (sweet, salty, double salty - they call them dropjes) in my life. You didn't say when you would be there, but I've visited Amsterdam 3 times and have never tired of strolling around the streets/canals and popping into their little shops. The Jordaan area has some lovely brown cafes and restaurants.
