From my own search for a trip later this year, I have found the following. I have not taken any walk offered by any of them.

3. http://www.venicescapes.org/Venicescapes.htm They look very interesting and in depth. This is the group I am leaning towards using, as they seem to be like Scale Reale in Rome.

Sorry I didn't see Florence was on your itinerary as well. I have signed up for a couple of tours with Florentia; take a look atat http://www.firenzeantica.org or http://www.florentia.org/team.html They are recommended by Scala Reale.
The folowing company was also recommened to me on this site: artviva.com
Accidental tourist has some interesting walks, etc, but they are all outside of Florence.
