I've been inside the Roscioli restaurant but only to buy food items (they sell the colatura from Acquapazza in Cetara so I bought that....I also remember a related food shop around the corner..)
.......I knew the older Roscioli food shop near Campo del Fiori...... I am sure you will adore it..gets great reviews! Happy birthday!!!!
They are opened a place in New York last year, in Soho....
BUT: .the one in Rome it was filled with English-speaking tourists when I went in (on the way to EMMA where we ate twice in one week last time in Rome).
We actually loved the venerable AL MORO, But that gets very mixed reports from non-Italians. Near Fontana di Trevi but sort of hidden away...

Yes, you need to book in advance........for just about anyplace, it is more polite, I think.. Do it online, call, or have hotel call for you.
Where are you staying In Rome?
