Several years ago, we ate at Da Paris on Easter Sunday night. But I seem to recall they may have changed their closing day to Sunday. Sabatini is usually open on Sundays, but check to be sure about Easter. In addition, many restaurants open on Easter Sunday will only serve one meal, the big "lunch" from about 12 to 4 and may not be open later. Two restaurants that I know are open Easter Sunday night, but not in Trastevere, are Vecchia Roma and Le Volte. You might also check with the restaurants in the Ghetto, like Piperno.
