Toddler friendly Spain itinerary
Looking for your practical tips and thoughts please on itineraries for the following locations with 1 toddler and a 4year old in tow + 3 adults, what are some realistic sights and places to visit:
Arriving Barcelona (3 nights)
Fly Malaga (2 nights)
Bus Granada (3 nights)
Drive Seville (7 nights) via Cordoba (day trip)
Fly back to Barcelona (5 nights)
we also need a couple of days shopping in Barcelona and probably 1 day in Seville (we love our outlet shopping!)

This is a LOT of moving around with two hobbits, especially with a toddler.
Rethink.
Consider going straight to Malaga or Granada by plane after you arrive in BCN, stay there for a few nights (Malaga preferably - Granada has the Alhambra, the burial place of Ferdinand and Isabella, and not much else), then you can go to Seville and back to BCN for a long stay.

Check out Nerja close to Málaga city, some friends bought a house here after visiting some years because it's perfect for kids and at the same time plenty of culture/nature to keep them on their toes. Beautiful little town, we go here all the time the past 15 years: http://www.nerjatoday.com/

Thanks @BigRuss and everyone for the advice. It is a lot of moving around as we got greedy, however the transport has been booked and I am now looking to set my expectations accordingly.
We are planning to see 1 at most 2 tourist attractions each day and 1.5 days in cordoba.
In Granada we only plan on doing Alhambra, with a full day to mooch about, possibly Capilla Real.
Barcelona is probably the most challenging destinations with a thirst to possibly do more than we have time for.
If anyone has an order of tourist sites for Barcelona with toddler and small child in tow, I would appreciate that.

The sites in Barcelona are not particularly child friendly, with the exception of Parc Guell where they can run around and tire themselves out, Mont Juic and Tibidabo. Further out you have PortAventura and the Illa Fantasia Water Park.
The other main attractions like the Sagrada Familia, Gaudi houses, Palau de Musica Catalana etc are not designed to allow for marauding kids and I wouldn't want, in any case to lose sight of them, which you will easily do in those places.

I think there are plenty of child-friendly sites in Barcelona, just not toddlers who can't do much of anything, anyway (can't read, etc). So they can't go to the child-friendly museums which are for older children, although the Science Museum can work for age 3 and up. I think kids like the Maritime Museum, but they are too young to appreciate that (not sure about the acquarium).
I think the Chocolate Museum would work, they have exhibits for children. http://www.museuxocolata.cat/?lang=en
Also, there is an amusement park up on that nearby mountain, Tibidabo, but that may be too much with only 3 days.

Of course the show isn't until about 9 pm. That would work if you stayed in a hotel around placa Espana, but may be too late for children that little otherwise. I don't know what time of year we are talking about here. But with 3 adults to help take care of things, that might be do-able.
I think the hopon/off bus might be enjoyable with children that little and it does cover a lot of areas that involve more trouble to get to on your own (the far out ones, like Montjuic). In the center, it can be slow. But it's an easy thing to do and the ride can be enjoyable for the views in fine weather (on top).

FWIW, we went to this outlet mall between Barcelona and Girona: https://www.larocavillage.com/en/home/ We were staying with friends and they drove us there.

Thank you, you've all helped me to narrow down on the attractions. We'll definitely do Park Guell, magic fountain and hop on hop off bus maybe a good one to start off our trip and get our bearings.

It depends on what you want to find. It is a lovely outdoor mall and you get to see Spaniards leisurely shopping, so you kind of get away from the tourist traps. they do have buses arrive with tourists, but the majority of shoppers are Spanish.
I bought unique sandals from a Spanish designer there, but, overall, it's not worth a separate trip. We drove from Barcelona to Girona and stopped on the way. Our friends live in Barcelona and have a house in Sabadell and in Lloret del Mar, so it was very convenient. I wouldn't travel to La Roca just to go there.
