Three 'dream' dinners in Florence that captures its essence?

I'm curious to know, if you were three nights in Florence and wanted to experience a good sample of Florentine/Tuscan cuisine, where would you go on each of these three evenings for dinner?

Disclaimer: a 'dream' dinner does not mean (at least to me) 5 star service and prices to go with them. They can be small trattorias, little mom-and-pop places or even pizzerias, which capture the essence of everything Florentine because of their food and ambiance.

Note that the two places I am recommending are a bit of a walk from the "central" Duomo area; both are in the Oltrarno. Both of these places epitomize the rustic cooking of Tuscany in no frills settings. Both are popular with locals:

Note that the second restaurant recommended by Webman is in Impruneta which is quite a distance from Florence! And the first one can be reached by taxi at a cost of about 20 euro each way! Not very helpful for someone with 3 nights in Florence!

There are really a lot of good places in Florence--try to get out of the central historic area a bit. South of the river near Piazza Tasso area are several good spots....
