Personally I prefer the areas between the 1st and 5th districts.

Be sure to linger on the Pont des Arts, the pedestrian bridge right below th Ile de Cite. One of the lovliest views in paris.

The location of the Pont des Art was selected by Napolean for its views up and down the river, including the Louvre and Ile de la Cite.

My favourite walk is to start on the left bank (Quai de Montebello), opposite the Notre Dame, and walk downriver to the Quai St Bernard, towards the Gare d'Austerlitz. You then arrive at the entrance gates leading into the Jardin des Plantes and can stroll through there and up to the Mouffetard area, and even stop off at the Mosque tea rooms for a glass of mint tea on the way.

It's also quite fun to walk down to the little park at the northern tip of the Ile de la Cité.

Bear in mind that if you're walking along the left bank, as you approach the Pont Neuf you'll find that there are a lot of homeless people living under the bridge and around that part of the quay. It's not dangerous or anything, but it's not really a part of the bank that people tend to stroll along.
