Rome Retaurant That Serves Organ Meats

I remember reading somewhere here that there is a restaurant in Rome that specializes in serving different organ meats such as tripe, sweetbreads, etc. Can anyone help me figure out what the name of the restaurant is and where it is located?
DH loves this kind of fare. Thanks!

There are lots of restaurants like that. The trick is avoiding the one Rick Steves sends everybody too.

You should get a copy of David Downie's food guide to Rome. It was just published this year. It's on amazon.

I am almost sure that the best advice for you can be the restaurant IL QUINTO QUARTO (its meaning is funky: The fifth fourth) whose specialty is what you are searching for. But, anyway, also do not miss there one of the best "carbonara" in Roma.

zeppole-thanks for the recommendation on the food guide. I will look it up on Amazon later today.
maitaitom-I can't remember the name of the restaurant but will definitely check this one out! Thanks!
Vincenzoda-Ooh...I think this may be the one. I couldn't get the menu up on the English side of the website but will keep trying. Mmmm..something for me too! I'm a HUGE Carbonara fan! Thank you so much!
LAwoman-Thank you for the Context link but I don't think we will do an organized food tour. We'd like to have fun discovering places, including markets, on our own since we will have an apartment that will allow us to prepare a few meals too.

Thanks everyone for getting back to me so quickly! We leave September 14th for our very first visit to Italy and I am getting so excited!
