Sassafrass, I love your suggestion of a full day of Positano and Amalfi coast! As long as I can make Pompeii happen on the way to Naples, then That would be perfect. I didn't know Pompeii would have an area for me to securely watch our luggage. I will look into this further Thanks!

Dawn2dusk, you’re making great progress. I stayed in a sweet little hotel in Sorrento, the Mignon Meublè, http://www.sorrentohotelmignon.com. Tucked away on a pedestrian street with a grocery next door, in just a few minutes you’re in the center of the action. There were stairs (not steep as I recall) up to the first floor and then an elevator. I was there in early May so air conditioning was not a concern.

Even better. Great idea to take the ferry from Naples to Catania. To find car hire depots, go to google maps. put in Catania, press "nearby" and instead of clicking the hotel or restaurant button, write "car hire" into the search box. There are 5 or 6 within easy distance and you could probably get a taxi there, or organise a car service to meet you. Your family can probably help you sort this out. We used Firefly which I see isn't that far from the port as well as the airport and they were fine.
