annhig--I appreciate your thoughtful and generous answers; I hope the drastic nature of your last few days has settled out some, for the health and good of all. The suggestions are great; and the "warnings" (low ceilings, pasty-eating/spoiling gulls!) are helpful.

And to have already picked the BandB you thought looked good is affirming!

I know we won't have enough time in Cornwall; but I'm blessed by M to be have time at all, so I'll just be choosy in our itinerary while also flexible.

I've been trying to make this itinerary now and then put it to rest until next spring, when I certainly may have more details to beg your expertise on. You have helped. You are awesome, thanks.

Has anyone suggested the Old Operating Theatre http://oldoperatingtheatre.com

thank MissPrism; no, no one mentioned the Old Operating Theatre...ha. We'll have a look at info. We've gone by the George Inn but not in it; it's a possible re-visit, thanks.

When we visited the Cathedral in Chester they had free tours. We had an amazing historian leading the tour. The group was small, but we happened to be with a group of cathedral enthusiasts from England. We just listened and learned and enjoyed it so much.
We also enjoyed walking around the Roman ruins.

Thanks,buferson; from the feedback above, we have decided to most likely have a stop in Chester our last day before flying, so that sort of info is helpful.
