May I suggest that you might want to just relax a bit and not plan your days hour by hour, or even day by day? For one thing, weather may interfere. For another, diversions, often the most pleasant moments of a trip to France, may crop up. You have a very, very short trip.I wouldn't be taxing myself by trying to rush hither and yon, but rather savoring Paris and maybe one daytrip( certainly not Lyon for 2 days) in that short time. Toss the spreadsheets and throw cochon to the wind and enjoy your trip. You have selected a good choice of things to visit, but don't let them tie you down - fancy is part of what Paris is all about, and maybe something unexpected will catch your fancy.
If you want ethnic/vegetarian food, you can find plenty of it in Belleville and Ménilmontant, though these are parts of Paris that probably don't conform to your imagined images.

Hey Everyone: Just a quick update that we've been here a week and absolutely loving it. Of course, as StCirg suggested/hinted, things don't go completely as expected. We did not do Versailles or Monet's garden but doing other things that we'd not initially planned for. Our days also are "short" (my daughter doesn't really wake up before 11
) and so we take it easy with her and just enjoy our time together.
