Recommendations on villa in Tuscan

We plan on family spending together a few days in a Tuscan countryside in mid-October, we are couple in our 60-ies and two grown kids with their spouses. I love mushroom hunting and I have heard of a possibility to do it in Tuscany. A culinary class would be very welcome, kids love to cook. I'd prefer not to rent a car, but would rent one if necessary. The rest of the trip is not planned, but we will be in Florence for several days for sure.

Internet searches give me so much of unbelievable beauty, so it's hard to choose, looking forward any pointers, thanks in advance!

We like to deal with Karin Dietz at Chianti and More in Panzano as the properties she lists are only found on her website not like most properties that can be found on many websites but with different “names.”

We have visited this award winning farm two times in Tuscany. Can't recommend them enough. We took a farm tour and ate a wonderful lunch outdoors both times.

We stayed here & loved it:
Hotel Tenuta Di Artimino Meliá Collection | Melia.com

Lodging is in the carriage house of a former Medici Estate, so rooms are above what used the be the stables!
Great location & views. Quite remote, so a car would be necessary.

Toscana Saporita .com They have a week long stay with cooking class and truffle hunt
The area around San Miniato is famous for its truffles
