Provence itinerary

I'm almost dedided on my itinerary! Two more questions for all you experts -
My trip brings me for an overnight either at Uzes or Gigondas on Sunday night. Will I be able to see anything or will shops,etc be closed in Uzes on Sun aft and Mon am ? Will wine tasting stores be closed in Dentelles and Chateauneuf du Pape as well on Sunday and Mon?
My only alternative itinerary makes one of my full days based at Gordes a Monday. Would a tour of Menerbes, Bonnieux, Roussillon be worthwhile on a Monday or would I be looking at closed shutters everywhere? I don't care about shopping all that much but do want to see the villages at their best. What does one DO on Sunday and Mondays???

the domaine de valmouriane is very nice; it's owned and operated by an english/french family. there's enclosed parking that's locked up at night, useful in the region, and the pool is simply gorgeous. our room was quite spacious and had its own patio.
