Would anyone happen to know the name of the town before Positano
I believe it begins with the letter S
Someone had recommended getting off of the Sita bus from Sorrento
at this stop and walking they said
a short distance to Positano

Hi Kathy - It's not a town - it's the name of the LAST bus-stop in Positano ( - the stop nearest the centre).
The stop is on the main road above Positano. It's called 'Sponda.' From this stop it's a 3 mins stroll down to Positano centre.

Steve, when we're returning from Positano to Sorrento, is the bus stop for the Sita bus back to Sorrento directly on the opposite side of the highway from the Sponda/Positano stop?

If so, leaving Sorrento in the morning, would we need to ride all the way to Amalfi and then ride back to the Sponda stop; or would it be more practical to get off at the Chiesa Nuova stop and brave the longer walk?

No. The Sponda stop is operative in BOTH directions regardless of season - it's just not listed.
Coming from Sorrento, the 'Sponda' stop is 5 mins after the Bar Internazionale/Chiesa Nuova stop (- the bus circles the upper part of Positano).
You can't miss it - EVERYONE for Positano gets off there
