Paris Hotel for 3 Adults

We are a couple with one adult child so we rented a bnb. You can use what i think they call an aparthotel like citdines or you can use booking.com etc and put in your search for a room for 3 adults. You will find many apartments/hotels that will have a one room apartment with a king bed and a sofa lounge etc..... so I am sure that you can get it remade for 2 singles and a sofa bed. You will also find places with connecting rooms but I don't think you are wanting this.
My preference was to have a 2 bedroom apartment which I found in Airbnb.
I can list up some of the things I found on booking.com and airbnb if you'd like
By the way, for airbnb you must ensure that you book with someone who is registered, otherwise it is illegal

Triple hotel rooms are commonly available if you are willing to get by sharing a single bathroom. Agree that using booking.com to search is a good idea. Do pay attention to the size of the room as it will likely be crowded by US standards. Holiday rentals a la AirBnB are also an option, but prices have risen to the point that it is no longer necessarily cheaper than a hotel. You might also have a look at Paris Vacation Apartments which has the advantage of being US based and gets good reviews on this board..

The Citadines aparthotels have some apartments for 3 and provide more space than many standard hotel rooms in Paris. They have decent sized bathrooms and small kitchens where you can prepare light meals - we found this particularly useful for breakfast and the odd supper. Also plenty of storage space which we were grateful for.

We have stayed at multiple Citadines. The one we stay at in Paris is the St Germain des Pres.
A studio will not work for 3 but a one bedroom will as long as one of you does not mind a sofa bed. some Citadines like Trafalgar will have 2 bedrooms.

I think looking for a Citadines are any hotel with connecting rooms, etc, would be the best idea for three grown adults.
That DLX room at Hotel de Seine is obviously meant for a family with a couple and small child (that's why the teddy bear). I can't imagine 3 adults in such a room.. Note that they say the bed size if you ask them to split up the King into Twins is only 90 cm each (and that's the child bed size). That is smaller than a US size twin bed, by the way. It is 90 cm which is 35 inches and American twin mattresses are 38 inches. I don't really know how they even do that given the picture shows a King headboard that cannot be split and the base also looks that way, but who knows.
I know a hotel I often stay at (HOtel Aiglon in Montparnasse) has one 2 BR apartment that is much bigger than that and at least there would be two BRs and two baths. I think it has a separate sitting area, not sure. It's a lot bigger, of course than the DLX room in the H de Seine. It is not really an "apartment', however, as there are no cooking facilities, but I presume that's ok with you anyway since you are asking about hotels. Lots of good restaurants in the area and good transportation.
Various hotels have the capability of adjoining rooms, of course, for parents and kids. That is another good possibility. Heree is one in a good location.

How about Hotel le Clement in the 6th?
We haven't stayed there yet, but we are booked in October based on many positive recommendations on this forum.
I notice they have a family suite, with one twin bed in a separate area and another bed which can be separated into 2 twins.It is not big, (welcome to Paris!) But we have stayed in that area many times and love it. Using a dummy date for next summer, it popped up at 223 euros a night, refundable. Breakfast is not included but available, and there are many other options nearby. Enjoy!
