Nuremberg, Germany - looking for hotel recommendations

As the Christmas holidays are over, I am back to planning our trip to Bavaria this summer

I've got our hotel reservations for Munich - 5 nights at the Hotel Laimer. I have heard good things about this hotel and the rate is nice - $105/night.

Now on to Nuremberg - I am looking for hotel recommendations for our 4 nights in Nuremberg. Recommendations about other things in town are completely welcome as well

Our budget is $100-125 per night for lodging. We are looking for something in a convinient location within easy walking distance to old town. To me, easy walking distance is about a mile and a half or less. Modern or traditional is fine, prefer lodging with breakfast onsite.

In Nürnberg we prefer the am Josefplatzhttp://www.romantikhotels.com/nuernberg/ with doubles at less than $100. It is within the old town walls and only a couple of blocks from the centrum. Small but charming in a reasonably quiet area. Car parking in a ramp is available a few meters away.
Second choice but more of a 'business mans' type hotel is the Victoria http://www.hotelvictoria.de also inside the wall and immediately alongside the big tower entrance in the SE corner near the train station. Doubles at the Victoria start at €79 and they have their own fenced parking area behind the hotel.

Check out the Kaiser Hof (I think that's it's name.) It is right down the street from the HBf and adjacent to the old city. You should try to see the castle and the site of the Nuremburg Trials after WWII.
